“Wheat Flour & Jaggery Halwa” is a sweet gooey textured fudge kind dish. Halwa usually has 2 primary bases; flour or nuts. Flour base halwa is soft and gooey where else nut base is usually bit hard and crispy. Halwa is a popular dish in India and its sub – continents. In few families it is served along with food while few prefer to have it after food. In India, it is quite common to have Halwa for breakfast as well for it is healthy and quite filling. There are different variations of halwa and this one in particular is made from wheat flour.
Total Time: 15 to 20 mins
Ingredients:
2/3 cup coarsely grounded wheat flour
3 ½ to 4 tbsp ghee (clarified butter)
1 ¼ cup water
30 g jaggery
¼ tsp cardamom powder
Dry-fruits to garnish

Method:
Take a microwave safe bowl and combine water with jaggery in it. Microwave on high for about 3 to 4 minutes till the water gets really hot and jaggery melts in it.
Simultaneously, take a heavy base pan. Melt ghee over medium heat. Add flour to it and mix properly making sure there are no lumps. Constantly stir and cook this mixture for about 6 to 8 minutes till the color of the flour turns light brown. Turn the gas to low heat.
Strain the jaggery water carefully into the mixture. (You’ll have to be really careful not to splatter water on yourself) Vigorously, whisk the mixture to remove all lumps. Keep cooking for about 3 to 4 minutes over medium heat till the water absorbs and ghee appears towards the edges. (TIP: Use a steal spoon to check. Insert the spoon right in the center; if it comes out clean, halwa is ready. If not, give it couple of more minutes.)
Sprinkle cardamom powder over it and mix well.
Serve it in a bowl and garnish with dry fruits. Enjoy hot!!!
