Baked Bean Quesadillas

“Quesadillas” are of different types. This is one Mexican dish when you can get really creative and let your imagination flow to choose your taste of filling. I love baked beans and these are one of my all time favorite quesadillas to make. Quesadilla is basically flour tortillas filled with cheese and or topping, folded into half and grilled or pan fried. This recipe makes about 6 Quesadillas and takes around 30 minutes to cook. It goes best when served hot with Pico de gallo, Guacamole and Sour Cream. It is a great after school snack or as a meal in itself.

Ingredients:
6 flour Tortillas
6 Cheese Slices
1 onion, finely chopped
1 small capsicum, finely chopped
4 medium garlic cloves, finely chopped
1 can / 460g baked beans with sauce
1 tbsp Mexican seasoning
½  tsp chilli flakes
1 tbsp sugar
2 tbsp olive oil
1 tbsp butter plus extra to make quesadillas.
Salt as per taste
Method:
Heat the oil in a pan; sauté onions, capsicum and garlic for about a minute over low heat.

Combine in baked beans (with sauce), seasoning, chilli flakes, sugar, salt and butter. Cover and let it simmer for about 4 to 5 minutes or till the mixture thicken up. Remove from heat and roughly divide portion into 6 parts.

To make the quesadilla, work with one tortilla at a time. Take a tortilla and spread 1 portion of baked bean mixture over half side. Divide the a cheese slice into 2 forming 2 triangles and place both triangles over the mixture. Fold the tortilla over to form ½ moon shape.

Cook the quesadilla over a hot tava or griddle with 1 tsp butter on both sides till the sides turn light golden brown. Divide into 2 or 4 and serve hot with Picode gallo, Guacamole and Sour Cream.
