“Burnt Garlic Fried Rice” is a yummy take on traditional Fried Rice. It is a simple dish which can be enjoyed all by itself, or served with any gravy base vegetable. Boiled rice mixed with variety of vegetables and a pungent flavor of garlic makes this dish taste awesome. I recommend it to all garlic lovers.

Ingredients:
1 cup long grain rice, washed and soaked for about 10 minutes (such as basmati)
2 ½ tbsp olive oil
5 to 6 garlic cloves, finely chopped
¼ cup onion, finely chopped
¼ cup carrot, finely chopped
¼ cup green beans, finely chopped
¼ cup capsicum, finely chopped
¼ cup spring onions, , finely chopped plus extra for garnishing
1 green chilli, finely chopped
½ tsp Chinese seasoning (optional)
1 tsp ajinomoto
¾ tsp dark mushroom soya sauce
Salt and pepper as per taste

Method:
Cook rice with some salt separately in a rice cooker or in microwave.
Rice should be bit firm and not uncooked. Strain out excess water and keep aside.
Take a wok and heat oil in it. Once oil is hot, sauté garlic till it turns golden brown. Add onions, capsicum, green beans, chilli and carrots to it. Sprinkle ajinomoto, cover and cook on low for about 2 to 3 minutes till the vegetables are cooked.
Add spring onions, Chinese seasoning, soya sauce, salt and pepper and continue to cook for another minute.
Mix in cooked rice and extra salt if required. Make sure rice is coated well with the vegetable mixture. Stir fry for another 2 minutes.
Garnish with chopped spring onions and serve hot.
