Oriental Fusion Omelet is an easy healthy breakfast that looks stunning and is quite delicious as well.
It takes time to julienne the veggies, but if you are in a rush, simple using a shredder does the job.
Presentation is the key to this professional looking dish.
Try it on one of the weekends and have a real good day start.

Serves: A Couple
Total Time:
Preparation Time: 10 mins
Cooking Time: 15 to 20 mins
Ingredients:
4 large eggs
1 small white onion, julienned
2 spring onions, finely chopped (green part chopped separately)
½ small green capsicum, julienned
1 baby carrot, cored and julienned
½ of small green courgette, julienned
3 to 4 pitted black olives, finely chopped
1 tbsp garlic mayonnaise
1 tbsp Dijon mustard
1 tbsp cheese sauce (readymade)
1 tsp khajur amchur chutney or any tamarind chutney
1 tbsp plum sauce
Chilli flakes according to taste
1 tsp oil
Salt and pepper as per taste
Method:
For the stuffing:
Take a small pan and heat oil in it.

Sauté the julienned veggies over a medium heat for about 3 to 4 minutes or till a bit tender. Do not overcook as it might lose out the crunchy texture.

Season it with salt, pepper and chilli flakes as desired.
Once done, remove the sautéed veggies in a separate bowl. Mix in all the sauces.

Keep the stuffing aside to be assembled later.

For the omelets:
Heat up a non-stick flat pan.

Whisk 2 eggs together. Season it with salt and pepper. Mix in few green of spring onions.

Pour the whisked eggs on your pan and carefully spread the mixture evenly all over the pan. Cook the mixture over low heat for about a minute or until the bottom is cooked.

Once done, carefully flip it. (Try and shake your pan a bit before flipping. If your omelet shakes a bit, it’s ready to be flipped) Cook on other side till done. Try to cook over low heat so that it doesn’t brown up.

Remove the cooked omelet and place in a plate.

Continue to make one more omelet with remaining eggs.
Proceed by:
Divide your stuffing into two equal halves.

Place spread the mixtures equally and evenly over both the omelets.  

Now gently and carefully roll the omelets into a roll the way you’d roll a spring roll.

Diagonally cut both the rolls into two halves.

Insert a toothpick in center to be on the safe side.

Enjoy your hot Oriental Fusion Omelet with a beverage of your choice.
