Carrot & Cucumber Raita with Dijon Mustard




Raita is basically churned and flavored curd mixed with any vegetable and mild spices. It is usually enjoyed with parathas or pulav. Carrot and Cucumber Raita is one creamy Raita which goes really well with any parathas of your choice. You can make it to accompaniment your main meal or enjoy it as it is.
Serves: 1 cup
Total Time: 10 mins
Ingredients:
1 medium carrot, finely chopped
1 small onion, finely chopped
1 medium cucumber, finely chopped
1 green chilli, finely chopped
½ tsp chaat masala
1 cup fresh yogurt
2 tbsp Dijon mustard
1 tbsp honey
Salt as per taste. (TASTE BEFORE ADDING. YOU MIGHT NOT NEED SALT AT ALL)
Method:
Take a bowl and whisk fresh yogurt in it. Mix in remaining ingredients.

Cover with a cling wrap and let it rest in refrigerator for 15 minutes.

Serve with hot Parathas or just as a dip.
