Egg Bhurji on Toast

“Egg Bhurji” or “Scrambled Eggs” is one very popular breakfast recipe. You can have it as it is, top it off on a bread toast or just roll in a chapathi… whatever you do, Egg Bhurji is one real healthy breakfast. Weight watchers can use only the white part of egg and discard the yolk. Add in some finely chopped vegetables and the dish becomes very interesting. This recipe combines regular egg bhurji or scrambled eggs with ready-made sweet relish. Sweet relish is a key ingredient here which gives sweet – tangy taste to your regular dish. Cooking Time: 5 to 10 mins
4 slices of brown bread
Butter at room temperature to spread on bread toast
3 eggs (If using only white part, make it 4)
2 tbsp finely chopped onions
2 tbsp finely chopped green bell pepper
1 tbsp olive oil
4 to 5 tbsp milk
¼ tsp chilli flakes
¼ tsp chaat masala
2 tbsp readymade sweet relish
Salt and pepper as per taste

Keep your bread to toast in your toaster.

Simultaneously, take a small bowl combine eggs and milk. Use a balloon whisk or an electric hand blender to whisk until the eggs are pale yellow color. The trick of having a perfect scrambled egg lies in beating them. If they are pale yellow color, they are nice and airy.

Heat a pan. Add oil, onions and chopped bell peppers to it. Sauté till onions get soft and pink.

Turn heat to low and pour the egg mixture into the pan. Do not stir. Let the bottom set. Once done take a wooden spoon or a rubber spatula and push the edges of the egg into the center. Tilt the pan a bit to allow the liquid egg to cook as well. Cook until there is no liquid left.

Season the cooked eggs with salt, pepper, chaat masala and chilli flakes. Gently give a stir to make sure seasoning is nicely mixed with the eggs.

Remove from heat.

Take your toasted bread and spread with butter. Take about ½ tbsp sweet relish and spread evenly on the bread toast. Repeat same with other toasts as-well.

Now divide your cooked scrambled eggs among your toast and spread evenly. Cut diagonally or as desired.

Arrange on your serving platter and enjoy hot with a cup of tea or coffee.
